I · Pijesak — The Sand

Sarbun is what they call sand in Komiža.

Above Salbunara bay, on the far side of Biševo, the vines stand directly in beach sand — the same golden sarbun you walk on at the water's edge below. No topsoil, no clay. Just grains of the island, warmed by sun, salted by the sea wind.

Sand keeps almost nothing for itself. So the roots go down — metres down — searching for water in the dark, and the vine answers with a small crop of small berries, dense with the taste of the place. Poor soil, deep roots, concentrated fruit. That is the whole recipe.

II · Vino — The Wine

Biševski Plavac2024

A true Plavac Mali, dark and unhurried. Dark cherry and dried fig, wild Mediterranean herbs off the island's slopes, and underneath it that quiet mark of the sand — warm stone, a breath of sea-salt minerality. Firm tannins, a long, saline finish.

III · Čovik — The Maker

One man, one slope,
one wine.

The winemaker is from Komiža, across the channel. Since 2016 he has worked this sand on Biševo — ecological from the first vine, everything by hand, because on an island without roads to the vineyard there is no other way.

“People ask what I add to it. Nothing — the island already put everything in the sand. I carry the crates on my back, I wait, and once a year the sea lets me take a little of it home in a bottle.”
